Chiarli’s Gran Prestigio is a dry (secco) sparkling Lambrusco di Sorbara DOC. It has an attractive pale colour, a balanced body and a very fine, barely pink foam that comes from a long natural fermentation.
After a light maceration of 18–24 hours, the must is drawn off and fermented at a controlled 16°C, and the wine gains its sparkle from a second fermentation in a sealed tank. Chiarli suggests it with dried pasta, boiled meats and cheeses.
