MANCINI Spaghetti Chitarra – Handcrafted Italian Tradition
From the rolling hills of Le Marche, Italy, MANCINI Spaghetti Chitarra is a celebration of time-honoured pasta-making and sustainable farming. Grown, harvested, and milled entirely on the Mancini family’s own fields, each batch reflects the unique character of the season — a true grain-to-pasta journey rooted in the land.
Made from just durum wheat semolina and pure water, the dough is shaped using a traditional chitarra (guitar-shaped) frame, producing a slightly rough, square-edged pasta that captures sauces beautifully. It is then gently dried for 22 hours at 36°C–52°C, preserving the wheat’s natural aroma, golden colour, and rich, full-bodied flavour.
The distinctive square strands offer a more substantial bite than traditional spaghetti, making Spaghetti Chitarra ideal for hearty ragùs, robust olive oil dressings, or bold, sauce-forward dishes.
