Chardonnay, pinot blanc, and a small amount of pinot noir. 36-month maturation with a minimum of 30 surlies, plus an additional two-three months’ bottle-ageing after disorgement. Bouquet is elegant, rich, lingering, with rich surlies characterictics. In mouth, crisp, rounded, and full-bodied, with a subtle vein of fruit and attractive acidity; luscious notes of freshly-baked bread. Excellent as an aperitif; ideal complement to antipasti, to first courses, to meats, cheeses, and to full-flavoured fish recipes. |
